To navigate through the menu of the EASC, you simply use the buttons for the cruise control on the steering wheel. I have attached a picture of the buttons.
Top one is Resume (looks like a speedometer).
The other two you will use are the + and – button under the resume button.

In inst manual is:
Put the vehicle in park and the key to the on position. Wait 30 seconds and press the resume button.
Keep the button pressed for at least 10 seconds and then release it. The ECU Control message should
appear on the information display. You are now ready to use your EASC. For operating instructions,
please refer to the user manual.
Where can I locate the resume button? On instrument cluster or cruise control or where?

Well, you can disconnect the ECU connector but you have to be careful or you will create an error code: First, remove the fuse number 57 in the glove box, this is the fuse that powers the ECU. You can also disconnect the battery. This way you will have no error code created. In fact, it is better to do so as you won’t short any wires while plugging them. I will modify the instruction manual to include this issue. Thanks for pointing that out.
Must the fuse holder be connected on one end to the ECU and second end to the EASC?
Yes, the fuse holder is to be put between the RED wire of the ECU and the RED wire of the EASC. Is it to protect the wires if something bad happens.
(Why one side of fuse holder is not connected to EASC connector profesionaly from you?)
Many aftermarket devices come this way. We preferred to concentrate our effort into offering better features. You are right, it is better to have it already on the harness, this is why will eventually design and order the harness this way but its not a priority right now.
